Dark Cocoa Cookie Granola

This Dark Cocoa Cookie Granola features our returning vault flavor: Dark Cocoa Cookie! This flavor was created by YOU as a part of our Customer Flavor Series and we were so ecstatic to see that so many of you wanted to see its return in 2024! 

Adding nut butter to your granola aids in making thick cookie-like granola clusters, while the chocolate chunks give it the added sweetness and decadence of a traditional fudgy chocolate cookie! 

Whether you like sprinkling this on your smoothie bowls, yogurt parfaits, ice cream, or just eating by the handful, we have a feeling this combo will become a new staple in your pantry! 

Ingredients

  • ¼ cup maple syrup 
  • ¼ cup Dark Cocoa Cookie Nut Butter
  • 1 tsp vanilla extract
  • 1 tbsp cacao powder
  • 2 cups rolled oats
  • ⅓ cup slivered almonds
  • ⅓ cup chopped cashews
  • ⅓ cup coconut shreds
  • ½ cup chocolate chips (optional) 

Directions

  1. Preheat the oven to 325 degrees Fahrenheit. Line a tray with parchment paper and set aside.
  2. In a large mixing bowl, whisk together the maple syrup, nut butter, and vanilla extract until smooth. Add the cacao powder and whisk again until combined.
  3. Mix in the remainder of the ingredients – except the chocolate chips – using a spatula or wooden spoon, mixing until just combined. 
  4. Transfer the granola to the baking tray and press into an even layer. Bake in the oven for 18-20 minutes, or until golden. 
  5. Remove from the oven and let cool completely before mixing in the chocolate chips.
  6. Store in an airtight container for up to 1 week. Enjoy!
